Banana & Chocolate Cake

A lot of people are making banana bread during lockdown. I think that’s a great idea as we all need some comfort food at the moment. It’s wonderful that so many people are baking. It’s great therapy during these uncertain times and so creative and satisfying.
I had 4 very ripe bananas and some out of date dark chocolate that needed using up and so decided to make banana cake, which I prefer it to banana bread. The result was scrumptious, so I thought I’d share the recipe with you.

2 cups/250g SR flour 

2 cups/400g caster sugar 

1 cup/200g butter/marg

2 eggs

1 cup/100g dark chocolate chopped

Extra 1/3 cup dark chocolate for topping

1 tsp vanilla extract

4 ripe bananas mashed

Utensils: Stand mixer, loaf tin & grease proof liner 

How to

  1. Mix fat & sugar.

  2. Add eggs and mix.

  3. Add sieved flour & mix.

  4. Add mashed bananas, chocolate, vanilla extract & mix. 

  5. Pour into greased, lined loaf tin & bake for around 50 minutes at 180C/Gas mark 4. Test with a knife and if it comes out clean, it’s baked.

  6. Melt an extra 1/3 cup of chocolate in the oven and pour over the cooling cake.
